Last night's dinner was inspired by glancing over at my potatoes that I purchased about two weeks + ago and seeing that they were in the beginning stages of growing legs and walking away! I had two packs of organic baby potatoes. Trader Joe's carries a nice bag of mixed potatoes and as you can see, one of them is purple! They also have a nice pack of organic baby sweet potatoes. I normally don't do both on the same night but it was necessary this time! :-) I like having baby potatoes because it's still plenty enough to fill up the crew and they don't occupy nearly as much space as grown up potatoes.
Look at all of those different colors! :-)
Seasoned with sea salt, ceyenne pepper, garlic powder and smoked paprika. Spritzed with canola oil cooking spray and baked at 400 degrees for 40 minutes.
Served with a tempeh ruben and garlicy kale.
The problem now is that I just shoveled down all of the leftover fries [the reheat nicely in the oven] and am not at all hungry for dinner. :-/ D'oh!
